


With a castle for support
With Lake Vänern, Läckö Castle and scenic Kållandsö in the immediate surroundings, it’s easy to be enraptured. Hvita Hjorten has a fabulous location, but it’s in the dining room that the magic happens. Nature is present inside the restaurant too – in the branches hung on the ceiling and the bilberry sprays on the tables, but above all on the menu, which is entirely determined by what ingredients are tastiest today. The castle’s magnificent kitchen garden looks more like a well-kept botanical garden, and supplies almost the entire vegetable needs of the restaurant throughout the year. As a starter, the garden is presented on your plate in the form of tempura-fried cabbage, but also in your glass – a blond ale from Qvänum Mat & Malt brewed with angelica from the garden. A meltingly tender side of pork is served with umami-sweet carrot purée, crisply baked onions, a herby mayonnaise and swoon-inducing quantities of brown butter A glass of gamay from the Loire stands up to the sweetness and adds an appetising acidity.
