C/O bar has a reputation as nerdy place, opened by bartenders who care only about mixology. Yet the hipster factor here is zero, and the mix of guests almost ordinary. Service is low-key and courteous from bartenders in white chef’s jackets, and the informative menu describes ingredients, preparation methods and tastes. The focus is on grown-up drinks served in carefully selected glasses, like a Tall, Dark & Handsome that gives you a refreshing jab of bitter coffee beans with a deep aftertaste of rum and anise. They also make ambitious non-alcoholic cocktails, and you can get vegan drinks in which chick-pea brine has been substituted for egg white. That way everyone can enjoy a good drink.
