Blind Date, Farm House Dining

Ööbiku Gastronoomiatalu (Nightingale Gastro Farm) was meant to be Chef Ants Uustalu’s summer home. But when a professional chef buys a farm it invariably becomes his workplace. Now Uustalu no longer goes to his guests, the guests come to him. Open year round, it’s an excellent venue for conferences and larger celebrations. In addition to being a full-time home, it’s a place for honest, simple country life. The final stretch of the road here is unpaved, when cars leave they are caked with dust or mud. And it’s not even an hour from Tallinn’s city center.

Uustalu doesn’t raise its own fowl, nor does he grow his own vegetables, instead his ingredients come from the surrounding area, from nature and from other farms. As a guest, that’s all you’ll know before dinner begins, the five-course menu is never revealed in advance. Just know that the food is the chef’s personal interpretation of modern Estonian countryside cuisine.

There are precisely two restaurant farms in Estonia, thus Ööbiku offers a rare and interesting experience, guaranteed.
