Kärme Küülik, or Rapid Rabbit, is unique as every single one of its hot dishes is cooked in a wood-burning oven. Over the years, the chefs here have mastered the art of working that fire, calling their craft wizardry is not an exaggeration. First comes a small basket of focaccia, slightly salty and glistening with olive oil, it’s so good you might even forget to order your main courses. But focus on the menu for a moment; the creamy tomato soup with Halloumi cheese from Tubri Farm is a steaming hot bowl of love. To live up to its name, there’s of course rabbit on Kärme Küülik’s menu. And not just the lean, white meat, but also some of the country’s best rabbit offal.
As is customary in Estonian homes, everything is served at the same time, making for quite a feast. The owners, who also work the dining room, love to go on wine tasting explorations and every trip results in new gems on the wine list.
