Right from the get-go, Hapsal Dietrich became a prime reason to visit Haapsalu. More precisely, we come to admire the kitchen’s infinite talent for preparing ordinary dishes in a very distinctive way. The whole menu exhibits splendid examples of this rare skill. In summer, we make sure to try the cold soup and compare the current menu to all the past ones. We never cease to be amazed by the simple but brilliant iterations of traditional recipes, always made new and exciting, and utterly unforgettable! Last summer’s okroshka was made not with kvass or kefir, but with natural yoghurt. The fluffy creamy texture and the delicate, mustardy aroma refuse to fade from memory and will most probably stay there until next summer. And the salmon tartare! How on earth do they––and no one else––figure out that the pure taste of fresh salmon is made even more extraordinary with … ripe peaches?
