Green farm dinner

The kitchen at Stelor has had a bit of a hard time carving out a character for itself, but now it’s settled on a fixed menu, called ‘farm dinner’. Great, we say, while chef Linus Ström coolly notes that à la carte is too complicated for a seasonal place in the country. Hence the farm dinner: one menu. One season. Weather permitting, which it almost always does on Gotland in summer, the meal begins with a drink in the garden – bubbly for the adults, apple for the kids. When everything’s ready we are gently called to the table in the barn’s glazed extension. Snacks of tempura-crispy zucchini with a wild garlic mayo. Then a crunchy and refreshing salad of kale, lentils and beetroot. This is followed by a somewhat sweet risotto with maize. The wine list is equally green, or orange. Almost every item is a vin nature. A bold move! The farm dinner is a stroke of genius by Stelor, pulled off with focus and confidence.
