Sustainable in Floda
The old tannery by the river in Floda has been resurrected with future-sustainable intent. The plan includes growing vegetables, farming fish (!), brewing beer, baking bread, and cooking food. In early 2019 the bakery and restaurant are in place. Order over the counter – the fish, meat or vegetarian dish of the day relies completely on seasonality and availability. Servings are large, and animal protein plays second fiddle. Or even third. There’s even more greenery in the generous salad buffet, and the bread is baked on the basis of yesterday’s bread and this morning’s coffee grounds.
